Thought I'd mess around and see what I could come up with. I ended up cooking a couple of chicken hooters and making sort of a chili alfredo sauce for them. Wasn't too bad but I went a little too far with the cumin and it was a bit stronger than I would've liked. Ate it over a bed of white rice with a salad on the side (romaine, red onion, bacon bits, garlic croutons, carrot, parsley and a very little dab of ranch dressing). As always washed down with a large icy glass of 2% milk.

I'm going to have pork loin roast but I haven't decided just how to cook it yet. I'm leaning towards putting it in the "Set it and forget it" machine and letting it roast that way. From there some sort of potato dish and maybe some carrots or corn.

I went ahead and did the pork loin in the rotisserie and it turned out great. I accidentally made some really good mashed potatoes too. I was going to make them with garlic & cheese but didn't realize until I was ready to add the cheese that I didn't have what I needed. I did have a can of that Frito Lay mild cheddar dip so I used a little of it and a little less milk & sour cream than I normally would and it turned out really good.

Meatloaf and mashed potatoes does sound good.
I took out a few chicken hooters earlier to thaw and plan on wrapping them with bacon and roasting them. Not sure what else I'll make though. Probably some sort of cheesy potato dish. Maybe some green beans.

I've been getting mostly vegetarian Korean dishes for the past 4 days in order to get some kinks out of my system (from overdoing too much cheap Chinese takeout) and its been doing my body really good...so I'll be having a bento of assorted raw & marinated veggies (spinach or kale, mushrooms, bean sprouts and radish) as the main groove, maybe a side eel kimbap (rice roll) and another side of soba noodles or seafood pajun (pancake). It mostly depends as the place I get takeout from changes their offerings and also by the time I get there certain choice items might be gone.

I went with an early dinner today. Made one of the T-bone steaks that I got the super discount on over the weekend and cooked it to a perfect med. rare. I also made some garlic mashed potatoes (went a bit crazy with the garlic) and some baby carrots. Right now I'm thinking that I may need to open up a bottle of wine for dessert for a real change of pace.
