I'm not having much because lunch was ginormous -- turkey breast, old, old cheddar, greens & tomatoes, a small beef/potato curry & ginormous grapes . . . I'll prolly just snack on the pecan pie in the fridge before bed
Oh, PixieSprite, Dan says he doesn't have a recipe -- he just diced the mangos with some brine (he added water when he baked the ribs then bbq'ed 'em) & added butter.

that sounds delish booger... I've never made pork loin, but have been curious to learn how.
Cooking a pork loin isn't all that hard maddy just put it in at 350 and cook it till the center reaches 165. I would sujest starting it off for 45 minutes and checking it every 15 minutes untill it gets close (145-160 range) then every 5minutes. Then pull it out and let it rest on the counter for 5 minutes then slice and serve.
The only big diference with my roasted apple cider prok loin is I marinade over night (for at least 12 hours) in a brine made of apple cider and salt.

Denny made a really good cuban black bean recipe the other day. We'll be having it tonight with rice, sliced tomatoes, broccoli and 7-grain bread.
We went to Dave and Busters's and I had the Jack Daniels Bar-B-Que chicken, fried onions and mashed potatoes with everything!! It was so good, especially after almost two weeks of seriously dieting.
