The bread and cheese is going down well, but I found the gin and tonic first, so haven't got to the wine cupboard.

I'm not sure yet what we'll be having. We may be going to Wilderness's parents for a bbq but I don't know if that's tonight or tomorrow. If it's just tomorrow, I'll end up making pasta with pesto, probably with a salad on the side.

Oldfart

home-made sourdough bread and a chunk of cheese. Now, where's the corkscrew?

Probably 70 percent of Oz wines are sealed with Stelvin screw-caps. As they have a 10 year lifetime, they are not suitable for long-term cellaring. There is a lot of good 4 year old red wine here. Where we get buggered is when someone shows up with a cork and no corkscrew.

Neige
05-16-2010, 07:06 PM
When I buy Australian wines at the liquor store here, they're nearly always screw-capped, and not corked. Unfortunately, screw-cap wine here is usually cheap, average wine, and I know a lot of people who hesitate to buy bottles sealed that way.

Oldfart
05-16-2010, 10:28 PM
It's the way of the future. I buy $35 to $40 wines for special occasions with stelvins.

PantyFanatic

You should begin seeing a lot of ‘synthetic’ wine corks soon. Too bad cork trees don’t reproduce as fast as humans.

Neige
05-17-2010, 03:22 PM
I don't buy much wine (my parents make their own, so I just get some from them!), but I have noticed that MASI (http://www.masi.it/) uses synthetic corks.

PantyFanatic
05-17-2010, 03:30 PM
Actually this is a case of improvement. The synthetic cork can be produced with more uniform and better properties for the application than the natural product. There are no two pieces of cork exactly alike.

I bet alligator tastes better than crocodile though.

Meat from the crocs is sold at the farm. It's OK, but I wouldn't go past a steak to get to it.

Wedding Venue is a new direction for the farm, but it was OK except for the occasional waft of 'eau d'effluence'. They're beautiful creatures.

Lord Snow

Considering their design hasn't changed all that much since their prehistoric ancestors, you might be right on that. Alligator tail tastes kind of like turkey to me. I had it once while visiting South Carolina before moving there. I agree, I'll stick with beef. After all, it's what's for dinner.

Probably not much.

I had a big lunch at the Glenti, a big Greek themed weekend event here in Darwin.

Mmmmmmmmm souvlaki, baklava, and my new favourite, an un-named hot Greek

custard pie (with millefois). Factor in some 4.5% beer and a pint of Guinness on the way

home and I'm probably not eating much tonight.

Which leads me to ask... What alcohol percentage is Australian beer, normally???

Oldfart
06-12-2010, 08:00 PM
Which leads me to ask... What alcohol percentage is Australian beer, normally???

Full strength beer is 4.5 to 5%, midstrength is 3.5 to 4% and lights up to 3%. The Guinness runs at 6%, but a pint of Guinness here is 20 ounces (like Canada), not 16.

PantyFanatic

I believe, like American brew, the Kunuks call that beer "making love in a canoe".

It's fucking close to water.

Lord Snow
06-13-2010, 07:02 AM
Not when to my taste they're all the same. I've tried a few different ones and couldn't tell any difference. All I know is that they don't suit my pallet. Though I can support your opinion.

PantyFanatic
06-14-2010, 09:30 PM
"black turtle beans"!? Are you sure those don't come from the rabbit cage?

Neige
06-14-2010, 09:33 PM

They're smaller than what the rabbit produces ;)

Lord Snow
06-14-2010, 09:34 PM
I admit, I have never heard of those types of beans. I think I might actually look it up.

Looked them up, they are commonly called just black beans. I assumed they were a different type than this because of the turtle reference. Very popular in Latin American, Cajun, and Creole cooking.

PantyFanatic
06-14-2010, 09:36 PM
From tiny rabbits maybe?

Just doesn't sound like something that should be in the soup.

Neige
06-14-2010, 09:41 PM
They went in the soup because they were the beans I had on hand. (I also had red kidney beans, but I like saving those for when I make chili!)

I think tomorrow night I'm going to barbecue ras el hanout-rubbed chicken legs, and serve them with Greek salad and some plain rice.

PantyFanatic

lets see lastnite i just did some apps for dinner. for bama and her parents i made some southern fried pickels, some stuffed pablano peppers and stuffed jalopeones some fried red tomatoes and some baked tomatoes. the night before i did some southern fried chicken, hotwings, and some dr.pepper hotwings and some stuffed mushrooms. ahhhhhhh nothing like says loving like clogging some hearts.oh and for those who don't know fried pickels are great and very easy to make. if anyone wants to know know how to make them or almost anything else i listed let me know. yes being a texan who loves to cook pays off.

soon as my contract is up i plan on moving back to nc with my soon to be wife and opening a resturant.

Neige

... and some dr.pepper hotwings ...

I need more info about these. :D

marlborodasreds
06-22-2010, 01:21 PM
ok the dr.pepper hotwings are pretty easy just a little messy sometimes. this recipe calls for 5 lbs of wings
1 cup of buttermilk or whole milk
1 egg
1/2 cup of a good hot sauce
3 table spoons of seasoned salt
1 table spoon of red pepper
1 table spoon of black pepper
2 cups of flour
1 12 ounce dr.pepper or coke or pepsi
2 really good hot peppers
enuff oil to fry the wings in peanut oil is best
also a pot to boil the the dr.pepper down

ok add the buttermilk egg and hot sauce in a bowl and stir together well
add the flour and other dry things to a bowl for dredgeing the wings in
put the dr.pepper and sliced hot peppers in a pot to boil down to a thickend state
dip the wings in the milk and egg then the flour and fry them till they are nicely browned .
once all of them are fried dip them in the soda reduction.
then put the wings either under a broiler or in a hot oven for at least 5 mins.
enjoy oh and do not touch your eyes or nose after you eat them until you wash your hands. i made that mistake ONE time.

Neige
06-22-2010, 01:48 PM
Sounds spicy :D

Could I bake them instead of fry them?

marlborodasreds
06-22-2010, 01:53 PM
hmmmm if your gonna bake or grill them it should be a little easier. add all the spices to the dr.pepper boil it down till it reduces at least a third ya are gonna want it thick pour on top of the wings and bake in a 350 degree oven for at least an hour. i of course like them fried but i also belive in a heart hostile menu instead of heart healthy one.

Lilith
06-22-2010, 03:12 PM
You can use a rack to raise the wings up for a primary bake to get them crispy and then toss in sauce to coat if you want a faux fried feel. I think Alton Brown uses a similar method.

And boy does he taste good! I don't know about the rest of the country, but I can confirm that here in Tennessee because of the expansion of the human population and the subsequent taking over of natural habitats as well as the killing of wolves and coyotes the deer population has boomed to an alarming size. Because of this boom, more deer are starving to death as opposed to natural predators. In essence, we have no choice but to hunt and eat deer.

What I call potnoodles are cheap, short-cooking noodles with a sachet of stock and some dried vegetables. It takes about 2 minutes to cook. It has virtually no nutritional value, but is probably better for you than potato crisps and caramel malted thickshakes.
