I had wondered that too one time as well! The answer that I received from a wonderful grandma type person (don't wanna say old) who baked a lot was this...

The eggs are used in recipies in order for the dough/batter to rise. If you use jumbo eggs, just use the egg whites and throw away the yolks. The yolks don't do much unless you want added color to say yellow cake. That is why, when making a white cake, you don't use the egg yolk...

The only difference between the jumbo egges and large/med eggs is the yolk.
