Another tip I learned the hard way: Both baking powder and baking soda can be used in a recipe calling for baking powder. However, soda won't brown like powder will, so it makes the cookies look like they're not done yet. You can sit there for 40 minutes wondering just why your cookies look like they're dough still, until they smell burnt. Yeah, it helps to grab the right one.
