I had to work until 8pm, so I had toast and hot tea. I normally have toast and red wine, but my dear husband forgot to buy me more wine. :eek:

Mrs. WI is not working today and I have a meeting tonight. Dinner should be interesting. ha ha
Tonight we are going to this wonderful little restaurant in town that serves awesome cajun/creole food. I will be having the Eggplant Pirogue, which is....fried eggplant boat, filled with crab and shrimp and topped with crawfish etouffée. And because this is a special night I might even get a side order of their creamed spinach that is out of this world!

A friend does dutch oven competions and cooked for us to nite,3 meat meatloaf,fried taters,corn and cherry pie OH SO goood!

If that is directed at my horseradish cheese, I got it a Kroger in the deli department.

Yes, it was. At Costco they have a creamy horseradish cheese that I have tried but never purchased. Looks like it would melt well.

we went quick & relatively cheap with Pizza from Little Caesar's....$5 hot & ready to pick up (for the pepperoni & cheese $8 for the triple meat feast)

Not sure about this evening. We're going to spend the day in Decatur at my wife's brother's home. Last night, we had cheese and bean enchiladas with rice, a great salad and some white cake afterwards. Very good. :)

Made a breakfast casserole. No one ever complains about breakfast for dinner
We had breakfast for dinner too! Scrambled eggs with cheese, pre-cooked bacon, and toast with blackberry jam.

We do that every so often, too. Scrambled eggs, some form of meat, and toast. Makes for a nice, light dinner. Yesterday evening, after a day at my brother-in-law's with tons of good food to eat ... we just had a fast food burger and fries as we drove home.

I stuffed tomatoes with imitation crab meat salad and served it on a bed of lettuce. Even the kids enjoyed it! Win!
Just had a cup of yogurt and will finish it with a glass of wine when I get home.

Last night I roasted a chicken & shredded the meat over a spinach & mushroom salad with ho'made lime-garlic dressing.

homemade chicken nuggets tossed in terriyaki or bbq sauce w/ a side of tater tots. my hubs has a 2nd job working at the local Hooters Sports Bar and is learning all the ins and outs of frying up chicken and cooking that he has never done before.

Just had a baked chicken, spinach, and cheese tortellini and garlic bread. Oh and a couple of glasses of red wine. :)
We just ate more than our fill of turkey, stuffing, roasted maple butternut squash, gravy, cranberry chutney, and whole wheat rolls. Later, once our stomachs can handle it we will finish off the most delicious rum soaked fruit cake that my boss made.
What did you have for Christmas dinner?

I took out ground chicken and am thinking about making some kind of patty with them, incorporating a myriad of veggies including onion, peppers, broccoli, zucchini and spinach. Possibly to be served atop a simple salad.
Doing an assortment of finger foods and of course a nice bottle of bubbly.

Joe brought home whole wheat turkey subs from Subway with all the veggies and spicy mustard
I found this recipe on Pinterest called Man Pleasing Chicken. It's in the oven now and smelling yummy! It calls for Dijon mustard, maple syrup, and rice vinegar. Fresh rosemary will be added in the last five minutes. Roasted red potatoes shall be the side.

Didn't take anything out for dinner tonight. Oldest is headed back to school tomorrow so the first inclination is to bring him out...but it's snowing now, so that looks like it ain't gonna happen. Guess I'll stop & pick something up on the way home.
Maybe some catfish. I usually dredge it in corn meal and cook it in the electric fry pan. I also have some shredded crab meat that I can use for seafood stuffing though. Hmmm...we'll see, I guess.

Lil, on the Chew the other day Mario said that he likes cold pizza with a thin layer of raspberry jam and few shakes of chipotle hot sauce. I personally think that sounds delish. What do you think?
